Antimikrobiyal Paketleme.

Öz

Antimikrobiyal paketleme, aktif paketleme uygulamalarından bir tanesidir. Antimikrobiyal paketleme besinlere bulaşan patojen mikroorganizma gelişimini ve bozulmayı yavaşlatan ya da tamamen durduran bir paketleme sistemidir. Antimikrobiyal fonksiyon paketleme sistemine antimikrobiyal ajanların ilave edilmesi ile ya da geleneksel paketleme gerekliliklerine cevap verebilen antimikrobiyal polimerlerin kullanımı ile gerçekleştirilebilir. Paketleme sistemi ya da materyali antimikrobiyal aktivite kazandığında; mikroorganizmaların lag periyodunu uzatarak ve büyüme oranını ya da canlı mikroorganizma sayısını azaltarak, mikrobiyal gelişmeyi sınırlandırır ya da önler
